OK I was hired as a Customer Care Rep which greets patients at the door of the clinic escorts them to their appt. and directs them to where they need to go. Now my boss is trying to get me to be his personal Assistant, and work in shipping and receiving. I accepted the titles thinking it wouldn't be that bad and at first it wasn't, but now I just can't take it anymore to put up with his crap all the time for the pay I'm currently getting, I asked for a Raise and was declined. I have since then applied for 5 different jobs at the same facility but in a different city. closer to me. Still haven't heard word back from them yet. I just want to know If there is any legal issues I could take since he is giving me 3 different job titles. Tried talking to his boss didn't work Tried going to Human Resources Dept they don't give a crap. I'm out of options, To top it all off he has no clue how to run a legitimate business in the medical field. He is doing it his way instead of doing it the way that the State of Mississippi wants him to do it.

There isn't much you can do to be honest. You accepted those titles yourself without making a new work deal.
You can however "quit" being his assistant saying it is not letting you do your job, for which you are getting paid for. I don't think you will have problems doing that.

And when he says fire, that is when you can sue. Just prepare yourself well though. Record the conversation.

Well I got an idea. Why don't you "quit" all the jobs you are working right now and be on the job who it is best for you. }

You can't just sue people because they fire you. There has to be wrongful cause, maliciousness, or a civil rights violation.
Sounds like your boss just sucks. Keep looking for a better job.
I think you should keep focused on your goals. I think you'll get through this if you maintain a level of clear headedness. Continue doing what you're doing. Try getting another job, try getting him in trouble, write anonymous complaint letters, write official complaint letters, and if you feel he's breaking Mississippi law then contact the state AG.
Another tactic which might might work is telling him you've found a new job (white lie) and that you can only work part-time. If your valued they'll want to keep you and a discussion might open up that you'll need a raise or promotion in order to consider this your only full-time job. Worse case is you have less hours for a while and work harder finding a new job. If that doesn't work out you can tell them you quit the job and now can restart full time. Just an idea. Something you haven't mentioned and may not have thought of.

Your boss can't just fire you without any reason, I believe.
He can't in my country at least, not sure how it's in the US.

I would honest just suggest keep looking for work, there is always going to be people who are butthead towards you.
