She starts up the conversations more than half the time. When we do talk, we talk for hours on end, and she compliments me a lot.

How else does she act? Complimenting you is usually a sign she could like you. Like stated before, we need more information. If she really enjoys talking to you a lot then odds are that she does.

Well, everytime we do talk, we talk for about 3-6 hours non-stop. Whenever I have to leave she demands me to text her.

Well, from my experience recently, I really liked this girl (now my girlfriend), she would pop up more often, we would talk at school and meet up a bit on weekends.
To see if she really does, talk to some of her friends or something (thats what I did and found she did like me), and invite her to the cinema one weekend. See how that goes
