Of course people will. There are people still playing the first and second Halo. There are people playing the first and second CoD. Yes, the numbers are decreasing but it's not like once a new game comes out everyone drops their old games to get it. (Some do, but I always go back to my old games after a while)
Well, It really seems the same as when 3 come out, Everyone was dissapointed at the story, but loves the online, personally, i think Reach will be excellent.
I think people will play it, but the numbers will decease exponential amounts.
Think about it this way:

How many people still play Cod:WaW and Cod MW1? halo 3 will have alot of players for a long time after reach is out no doubt. I still plan on playing a little.
I believe many people will still play once reach is out. Just like other people have said, it's going to be the same as CoD and other Halos. People will stick to the older versions as they like it better.
I think alot of people will still play it when reach comes out, Maby people maby just dont like Rheach
i will still be play halo 3 until it is done.
To the diluted few, Halo 3 reached and conquered the series; they will move onto Reach. However, the true fans of the series will continue to like many facets of gameplay in Halo 3, as well as 2, as well as 1; they will continue to play Halo 3 and Reach. If you find anyone dedicated strongly enough to completely disregard a new game of a series because one part--which, to me, neared not the top, but the bottom of the series--completely blows anything out of the water, call them a fan (read: child).

I will still play Halo 3, Reach looks a little too "newb-friendly."
